Rooibos (pronounced ROY-boss) is a GREAT choice for brewing kombucha for those with caffeine sensitivity (since it is caffeine-free)!
The flavor of kombucha brewed with rooibos is uniquely sweet and earthy. Even if you’re not caffeine sensitive, I would recommend adding rooibos to your kombucha brewing rotation to experiment and enjoy the delicious possibilities.
Rooibos is an herbal tea grown in South Africa, whose name means “red bush.”
To enjoy as a cup of tea: steep 1 tsp of tea in boiling hot water for 3-5 minutes. Add milk and sugar if desired.
To brew for kombucha: Use 2 TBSP tea per gallon of kombucha, Steep for a minimum of 10 minutes in about 2 cups of hot water. Then, dilute with cool water until it reaches room temperature before pitching your culture.
